Joyful Sushi Rolls|Raw Vegan Recipe

Sushi is awesome. You get all the flavours and textures in one bite, every time.
Pack all of your favourite veggies, fruit, or whatever food you love, in a roll of nori, cut it in bite size pieces and you will never be disappointed! You will always get everything! Don’t you hate it when you can’t fit all that you want on your fork? Problem dissolved: Eat sushi.

Even better, eat raw sushi. It’s much healthier and it’s amazing too.
Cauliflower and zucchini blended in a food processor makes a perfect substitute for sushi rice and it gives a very similar texture. And it’s easy to work with too, so we recommend you try it. Plus, it takes much shorter time to throw some cauliflower and zucchini in a food processor than waiting for your rice to cook.

Sushi is very simple to make, and it doesn’t take a lot of time. Especially if you don’t have to wait for the rice to cook and cool down. And it’s so fun to make, if you want to get creative and have fun with friends. It’s a perfect event to plan with friends and family to have a sushi night where everyone gets to make their own personalized sushi roll.

Joyful Sushi Rolls

For the “rice” you will need:

1 small head of cauliflower
1 small zucchini
lemon juice from 1/2-1 lemon

Start by peeling your zucchini. Cut the cauliflower and zucchini into smaller pieces and place into your food processor and pulse for 1 minute or until a rice like consistency. Add lemon juice to your cauliflower and zucchini rice and set a side.

Ingredients:
4-6 nori wraps, preferably raw
1/2 cucumber
1 red bell pepper
handful or more of sprouts
1 small avocado
1/2 cup of mango cubes

Prepare vegetables by slicing them very thinly. Have water by your side when you roll up your sushi. Start by placing the cauliflower and zucchini rice on 1/3 of your nori wrap and line vegetables, mango and sprouts on top. Roll up your sushi and use water so that the nori  sticks together. Use a sharp knife to cut the nori roll into smaller bite size pieces.

For the dressing you will need:

1 heaping tbs tahini
Juice from 1/2 a lemon
Juice from 1/2 a lime
1 tbs fresh ginger, grated
1 tsp ground cumin

Blend  all your dressing ingredients together in a bowl with a spoon until everything is evenly mixed.

    Just wondering when you put your fillings on top of the rice do you Kay each thing side by side or stack on top of one another?? Thanks 🙂 x
