Raw Vegan Mexican Feast


I invited Lilja over to my house for a raw vegan Mexican birthday feast as she turned 20 a few days ago and was about to leave me for the summer. Now she’s off to California for a month to become a Raw Food Chef at the Living Light Culinary Institute. How cool is that! I can’t wait to hear about everything she is learning and doing and cooking and eating. You can see more about the school here.

After that she is going again to the Woodstock Fruit Festival in August with our friend Eva. I wish I could be with them like last year, but I got accepted to a classical piano music festival in Spain and that will also be very very exciting. And there will be lots and lots of fruit there too. Yay!


So this was our Goodbye Feast. I made us a big Mexican inspired Spicy Corn and Tomato Salsa which was sooooo so good. We ate it with some zoodles and lettuce, mango chunks (why of course!), avocado, lime, and a creamy tahini-cilantro dressing. Oh so delicious. And oh so beautiful.


Spicy Corn and Tomato Salsa

2 ears of fresh corn (preferably organic)
250 gr cherry tomatoes
2-3 medium tomatoes
1 sweet red bell pepper
1/2 red chili pepper (if you can handle 😉 )
Large handful of cilantro
3-4 spring onions
Juice from 3 limes and 1 lemon
1 tbsp ground coriander seeds
1 tbsp ground cumin seeds
A pinch of chili powder (if desired)

Cut the corn off the cob and place it in a large bowl. Cut the cherry tomatoes in quarters and dice the regular tomatoes and put them in the bowl with the corn. Chop the peppers and the herbs very finely and add them in there too. Squeeze the limes and lemon over and add the spices if desired. Mix everything and taste and adjust the spices to your liking! Serve over a bed of lettuce or zoodles with mango chunks and avocado for a beautifully vibrant bowl of happiness. Ohyea. For extra goodiness make the dressing below and you will have a feast. A feast i say. mmhmm.


Tahini-Cilantro Dressing

1 1/2 cups mango chunks
1/2 fresh corn
3-4 pieces sun dried tomatoes
3-4 green onions
Handful of cilantro
1 tbsp tahini
1 tbsp each of ground cumin and coriander seeds
Juice from 1-2 limes or lemons

Add everything to your blender and blend until super thick and creamy. You will probably want to add some water to thin it out. Add little at a time until you like the texture. We like it thiiiick as you can see ;).

    ég er vegan en hef dútlað við raw einstaka sinnum .. ég er að fara að taka viku af banana island .. fann síðuna ykkar í gegnum google í sambandi við það!
