It looks like mangos are in season now. The mangos are super juicy and sweet and we have been craving them like crazy.
We decided to meet for lunch at Erna’s house and make something delicious and fruity, like always.
Erna bought four HUGE mangos and we knew exactly what we wanted to make.
As you all know, ice cream is one of our favourite foods. Pretty much our staple food on this lifestyle.
And we think mangos always taste best when they are eaten as they are, fresh, and juicy. So ice cream with mango chunks it was. Strawberries and syrup take it to the next level.
We recommend you make this for you and your best friend, enjoy it on a summery day (or a gloomy rainy day like we did). Either way, it’s delicious and makes for a perfect date.
The syrup was inspired by Rawvana’s new recipe video with tamarind and bell pepper syrup.
This was our first time using bell pepper in a sweet sauce and it was surprisingly delicious and we are definitely making it again. We hope you try and like it as much as we do.
10 frozen bananas
3 huge mangoes
500 g strawberries
For the syrup:
1/2 cup tamarind pulp (soaked in water for 2 hours)
1 sweet red bell pepper
Tiny pinch chili powder
Water to blend
Start cutting your mangos in chunks and slicing the strawberries. Put them aside while you make the ice cream and tamarind syrup.
For the ice cream just blend your bananas in a food processor until creamy and smooth.
For the syrup blend everything up in a blender until smooth. Add as much water as you need.
