Fruit Tart topped with Vanilla Coconut Glaze

“The best raw food cake I have ever had” is what my dad said when he had his first bite of this amazing Fruit Tart with my secret coconut glaze.

This recipe is pretty high in fat so if you want less fat feel free to skip the coconut glaze and use something else. I like to put some banana glaze on top since I am a fan of bananas. I simply blend one frozen banana with a bit of water in the blender and BAMM you got yourself some amazing banana glaze! Banana ice cream also sounds pretty good to put on top if you want less fat in your Fruit Tart.

For the crust you will need:

1/2 cup of gluten free oats

1/4 cup of pecans

1/4 cup of cashews

1/4 cup of mulberries

2 tbsp of goji berries

1/2 cup of dates, soaked in water for about 1 hour if you don´t use medjool dates

1 tbsp of lucuma or maca powder (optional)

Place all the dry ingredients together in your food processor and pulse for 10 times or so (don´t make a very fine powder). Then add the dates to your food processor and blend until you reach a “crunchy cookie” dough consistency. Press the dough into a small pie form or if you don´t have that then feel free to use a regular size pie dish or muffin form if you still want to keep the pie small and cute. Set aside and make the filling and cream.

For the filling you will need:

1-2 kiwis

1/4 of a fresh pineapple or/and mango

4-8 strawberries or fresh raspberries

a handful of blueberries or any other fresh berries of choice such as blackberries

Cut all your fruit into small pieces and mix together in a large mixing bowl. Fill your pie crust with this fruity mix and go make the coconut cream.

For the coconut glaze:

1 can of full-fat coconut milk, refrigerated overnight (about 5-9 hours or longer)

1 tsp of vanilla powder or vanilla extract

When you open your can of coconut milk there will be a firm white coconut layer on top. Carefully scoop that layer and place into a mixing bowl (Remember to save the coconut water and use in your smoothie for lunch or in a fruity dressing for your salad). Add your vanilla to the mixing bowl and whip for about 3-5 minutes or until fluffy and light if possible. Place cream/glaze on top of your fruit tart and enjoy with some special friends on this beautiful day.
