Banana & Persimmon Pudding Swirl

Persimmon season is about to end. Thus, we  are eating a lot of them lately because we love them so much.

They are a fairly new fruit to us. Persimmons didn’t come to Iceland as we grew up, but now almost all of the grocery stores have persimmons and we are so happy and grateful!

Persimmons are such a perfect fruit, sweet and juicy. They are great with bananas, dates, mango, mandarin or pineapple.

Persimmons, mango and pineapple fruit salad are one of our favorite combos. Blending persimmons with mango can make a great fruity salad dressing or just as a simple smoothie. It´s ideal to add a persimmon to your green smoothie for extra sweetness, you deserve it!

For this recipe you will need:

2 frozen and 1 fresh banana
1 large ripe persimmon
1/2 tsp cinnamon
1/8-1/4 tsp nutmeg
pinch of vanilla
some water possibly
Pomegranate, dates or mulberries for garnish (optional)

Start of my blending your persimmon, cinnamon, nutmeg and vanilla together in a blender until smooth. Pour into a cup or bowl and set aside for later.

Rinse your blender if you want to, I wouldn´t bother though.

Next, simply cut all the bananas into smaller bite size pieces and blend in the blender until creamy adding water if needed. Pour your creamy banana pudding into a serving bowl and pour the persimmon pudding over. Stir with a rubber spatula or spoon and make the pudding SWIRLY. Garnish with pomegranate, dates or mulberries if you choose to and enjoy your pudding.

I recommend that you go to the grocery store and get some persimmons before it´s to late!
