My First Christmas as a Raw Vegan – Part Two

On Christmas Day I had a perfect lunch with my parents, my sister and her boyfriend, and my brother, his wife and two kids. It was a great day. I loved that we were meeting during the day instead of eating dinner and spending the night together when everyone is tired and the kids need to go to sleep. Then it’s bright outside and we got to spend some time together as a family (and I can take good pictures again, yay for that!).

I love this time of the year. When you meet everyone and see everyone. Eat good food and feel that you are a part of a family. It’s the end of the year and I love to sum up what I have accomplished throughout the year, see how much I have done, what I have learned, and how I have improved myself. It’s been a great year and I look forward to beginning the next one. I have done so much and there is so much I have yet to do.

On Christmas Day I made a simple salad out of foods I love, and are festive looking. I love the colours of this salad and it was delicious and super simple. For dessert I made banana-raspberry ice cream. Classic and yet so incredibly good you wouldn’t believe how simple it is. Just blending two frozen fruit in a food processor (fruit processor?) makes some awesome magic.

The salad is so simple and yet so satisfying. You can actually see all the ingredients in the pictures so there isn’t really much of a recipe. Just chop it up and chow it down!

But still, enjoy it. Because it’s good stuff, and festive too.
I love how pomegranate makes everything look like christmas. And when you mix it with some greens, it’s just plain holiday goodness. And it’s so juicy and crispy and sweet, it’s just perfect.

This salad has three persimmons, two mangoes, one pomegranate, half a bunch of cilantro, handful of dill, and some tangerine juice squeezed over.
