My First Christmas as a Raw Vegan – Part One

Happy holidays everyone!

I hope you have all have had a great time over christmas and new years, eaten some good food, and shared some quality time with your family and friends. I definitely had a great time, filled with delicious food, and nice evenings with my family.

I want to share with you what I ate during Christmas, as this was my first time being a raw vegan. I thought it would be hard, but I still had a good feeling about it, because I really love eating this way.
I loved eating delicious salads and making some creative desserts for me and my family. I spent some quality time with my family in the kitchen, and they enjoyed my salads as well.

For Christmas Eve I hadn’t really planned anything beforehand. I had dinner with my family, my parents, sister, and grandparents, and I just knew that I wanted to eat something that I know I love: fruit and veggies. My favourite fruits at the time are mangoes and persimmons so I made a delicious fruit salad with persimmons, mangoes, herbs and pomegranate and it turned out very festive looking and delicious. Everyone enjoyed it!


And those of you that have been following us on instagram probably know that I LOVE LOVE LOVE zucchini noodles. So what I made was tri-colour zucchini noodles, featuring tahini-ginger, tomato marinara, and basil pesto sauces. Hands down the best idea. Then I also used the sauces to make some zucchini rolls as an appetizer.

(The pics aren’t the greatest. Winter in Iceland is dark, it’s haaard 😦 )

For the tomato marinara I blended in my blender:

Handful of sun-dried tomatoes, soaked for easier blending
2-3 ripe and sweet tomatoes or some cherry tomatoes
Handful of fresh basil
2-3 sprigs of fresh dill

Tahini-ginger sauce

2 teaspoons tahini
Thumb of ginger, grated
2-3 sprigs of fresh dill, chopped
2 mandarins
1 tsp fresh lemon juice

Squeeze the juice from the mandarins and lemon over the other ingredients and mix well with a fork until it’s smooth and creamy.

Basil pesto sauce

1 small avocado
1 bunch fresh basil
Small handful fresh cilantro
Juice from half a lemon
1/4 zucchini
1 tsp cumin

Blend everything in your blender until smooth.

For dessert I made a delicious apple pie with a date caramel sauce and banana ice cream! It was sooo good!


I love how christmas brings everyone together, and even though I didn’t eat the same foods as everyone else, we still enjoyed each others’ company and had a great time.
