Mango Pomegranate Salad

This is one of the salads I made over the holidays with my family. It was so delicious and everyone that tried it loved it. Mango is so perfect in salads, it makes everything so juicy, sweet, and has an a m a z i n g texture. I love it!
You also may have noticed that I use them a lot in my salads. It’s just sooo goood. Heh.

This salad goes well with everything. It has a perfect balance of sweet and savoury. The tomatoes give it a savoury and salty flavour, while mangoes and pomegranate give sweetness, crunch and texture. Then fresh herbs just always take everything to the next level. Enjoy it all by your self, or share it with your loved ones. Either way, it’s delicious.

Mango Pomegranate Salad

2-3 mangoes
1 pomegranate
3 ripe tomatoes
1 bunch coriander
1/2 bunch dill
Handful of raspberries, I used frozen and thawed, but fresh are of course better
Juice from half a lime
Juice from one mandarin orange

Cut the mangoes and tomatoes in cubes and remove the seeds from the pomegranate. Chop the herbs and mix it all together in a large bowl. Throw some raspberries over and squeeze the citrus juice over everything. Let it sit for a few minutes to let the flavours come better through, trust me, it makes a huge difference!
