Holiday Salads for Joyful Fruitlovers!

Hey there all Joyful Fruitlovers!

This Christmas was our first as raw vegans! Yay! I had so much fun preparing dinner and ate such good food!
I want to share with you two of the salads I made, they were very simple and delicious and anyone can make them. I made Pineapple Salsa and a Persimmon Stuffing. I enjoyed these salads with some greens. Don´t worry, I made some extra for my family to have with their dinner. I might make this again New Years Eve because it was absolutely prefect. For the Pineapple Salsa you will need:

1 pineapple
4-6 medium tomatoes
1 or 1,5 cucumber
A big bunch of fresh coriander
A bunch of fresh chive
1/2 cup or more if dried golden berries

Chop the fresh herbs. Cut the golden berries into smaller pieces. Cut the pineapple, cucumber and tomatoes into very small cubes (almost chop them). Blend everything in a large mixing bowl. Serve and garnish with some extra herbs or golden berries.

For the Persimmon Stuffing you will need:

2 Persimmons, super ripe
3 medium Zucchinis
2 medium red bell peppers
A big bunch of fresh basil
A bunch of fresh chive

Peel the zucchini if you want to before cutting it into small cubes. Cut the zucchinis and bell peppers into small cubes. Chop the fresh herbs. Pulse the persimmons in a blender. Mix everything in a large mixing bowl and let it sit for about 30 minutes or more in the fridge. Serve with love and enjoy your salad.
