Pineapple Noodle Salad


This is a delicious salad, and it’s perfect for when you need something warming and spicy in the winter. I don’t eat a lot of chili or spicy foods because they are very strong and I don’t like to have them too often, but it’s fun to use every now and then.

I am loving zucchini noodles these days and I could honestly eat them every day.

Actually I am eating them every day. But every day they are different because I make a different salad, with a different dressing and different textures and tastes. πŸ™‚


This one I liked very much so here goes:

Ingredients for the salad:

1/3 pineapple
Handful of cherry tomatoes
1 red bell pepper
3-4 carrots
1/2 head of lettuce
1-2 zucchinis
1-2 green onions
thumb of grated ginger
and, if you like, 1/2 chili.

For the dressing:

2 small tomatoes
Handful of cherry tomatoes
Handful of chopped pineapple
thumb of ginger and some chili if you want it spicier.

Chop up your veggies for the salad. Spiralize the zucchini and mix together in a big bowl. Blend the dressing ingredients and pour over your salad.
If you let it sit for Β a few minutes it makes the noodles softer and even more deliciously soaked in this pineapple-y and spicy goodness πŸ˜‰
