Now I have been living on raw foods for 3 months! I have been eating mostly fruit and vegetables and some nuts and seeds since 17. august, when I flew to New York to meet Lilja and we went together to the Woodstock Fruit Festival. I am so grateful for finding this lifestyle and getting to see how beautiful it is. I am grateful for all the new people I have met after I went vegan and I am grateful for this bountiful earth we live on.
How amazing is it that food grows on trees? I have always thought that it’s the most awesome thing.
Iceland doesn’t have fruit trees. So food growing on trees isn’t very normal to me. Here, fruit is something that only comes from the store, imported, not so fresh. But we have vegetables! But they are grown in greenhouses though, the frost isn’t very fortunate for growing things..
This summer was actually the first time I picked a fruit from a tree. It was so cool! I went swimming in Italy and was sitting by the pool when juicy and sweet plums started falling on the ground all around us. And they were the best plums I’ve ever tasted and I was so excited!
Everyone was laughing at me. I think it isn’t as exciting for other people to see a tree. Hahaha
These last three months have been awesome! I think I have never felt as good in my life. I love how I always have great energy and I don’t feel tired in the afternoon, and I can actually wake up in the mornings! I have never been a morning person, and it was always a pain for my parents to wake me up for school. Don’t you know the feeling when you wake up but feel like you haven’t really slept at all? And you could sleep for like a month more?
Now I am waking up before 7 am, going to power yoga classes in the morning, and feeling great.
And what amazed me the most when I had been eating raw for a few weeks, was that my skin cleared up. I have always had sensitive skin and some acne, trying to get rid of it, eating healthier, exercising and everything, but it didn’t really go away until I stopped cooking my food. Then suddenly, my skin got so much better!
So, this has been a great experiment, and I am going to carry on eating my favourite foods: fresh fruits. Fruits have always been my favourite, so transitioning to this lifestyle has just been interesting and fun. Trying out a new way of eating can of course be hard, because you really have to learn a lot and change your perspective on what is food, but if you do it gradually, it can be really easy and fun.
Just try to have one raw or vegan meal a day, or even a week! See how it feels, what is different and how it tastes. And you can also try a whole day, a week or a month of raw or vegan foods, it can be interesting to see what happens, and it won’t hurt!
I don’t think it’s hard to eat so differently. For preparing my food, it’s much easier. It’s so simple easy to eat raw.
And for the social aspect, I have gotten used to it, and I feel that people around me are most often very interested and also helpful! Sometimes it can get awkward, but if I am open about it and talk about why I am doing this, why I’m vegan and show that I’m not super closed and weird about it, people have always showed understanding and interest.
My grandmother still wants me to eat meat though. Haha, hmm.
Here is an easy and simple recipe for you guys. It’s my favourite salad right now, I am loving zucchini noodles and my spiralizer is my favourite tool. It’s so cool! (rhyme master).
For the salad:
1 large zucchini, spiralized, or sliced thinly with a peeler if you don’t have a spiralizer
Handful of arugula
Handful of cilantro
1 1/2 red bell pepper
1 small head of lettuce
1 small avocado
For the dressing:
Small handful of sun dried tomatoes
1/2 red bell pepper
Handful of cilantro
1-2 soft dates
Chop and mix everything for the salad together in a large bowl.
Blend all your dressing ingredients in your blender and pour over your salad. If you let it sit for a few minutes it gives the noodles to soak up the flavour, and become a bit softer and more delicious and yummy. Then mix everything together again and enjoy! 🙂
