Stuffed Tomatoes

“Did you know that Iceland grows a lot of tomatoes all year round?” was a question one POLICE officer asked me as I went through security when I was traveling this summer. I laughed and replied with a sweet yes because I thought he was so sweet to remind me of what great tomatoes I was about to come home to. I have been eating tomatoes since I got home every day! I love them so much! But this was the first time I tried the big tomatoes from a local farmer here in Iceland. Yum they are so good and juicy!

For this simple and fun recipe you will need:

3-4 large tomatoes
1/2 medium head of cauliflower
1 small apple
1/2 medium cucumber
1 small yellow or red bell pepper
handful of fresh parsley and basil
lime or lemon juice

Cut a thin slice from stem end of each large tomato and scoop out and discard seeds with a small spoon. Carefully scoop out pulp to form a tomato shell (save the pulp and use in your salad or even in the stuffing).

Cut the cauliflower into pieces and pulse in your food processor for about 30 sec or until you reach a rice like consistency (donยดt over process!). Cut the cucumber, bell pepper, tomatoes and apple in small cubes and chop the fresh herbs. Mix this with your rice and add lime or lemon juice. Stuff your big tomatoes and dig in!
