Avocados are perfect for making creamy sauces, dips, spreads and dressings. I love using them for a creamy base for my noodles and making delicious pasta salads. I made this dinner salad the other day and it was so good! It was just the perfect texture for a creamy, rich, and filling pasta dish.
For the sauce I blended together in my blender these ingredients:
1 small avocado
3/4 of a small zucchini
3/4 head of cauliflower
1-2 tbs lemon juice
2 sprigs of thyme and dill
I blended it together and made a thick creamy sauce, adding water as needed. Then I mixed it with my salad that had:
2 zucchinis, spiralized
1 sliced red bell pepper
7-10 sugar snap peas
5 sun dried tomatoes, soaked while I made the sauce and chopped
Some chopped herbs: Dill and a little bit of parsley
Fresh tomatoes would be wonderful as well but I didn’t have them at that moment. I will definitely add them next time I make this! Or cherry tomatoes!
I didn’t blend it until it was entirely smooth, I left some chunks of cauliflower in there so it somehow reminded me of small cheesy bits of parmeggiano.
I also love trying this out with different herbs! Basil is DELISH with this, especially if you add some more tomatoes and have small chunks of avo still in there! Endless possibilities!
