Sweet Marinara Sauce with Zucchini Noodles

Basil is one of my all time favorite herbs. I bought organic zucchinis and I decided to have spaghetti for dinner. I have never had such a good marinara sauce before! I have made super many versions of marinara and this was it! This combo was perfect for my taste buds! (I´m a sweet tooth)

First, spiralize your zucchinis into spaghetti. I used 2 medium zucchinis. Cut cheery tomatoes and chop some fresh basil for garnish. Get ready to make an amazing marinara sauce!

For the Sweet Marinara Sauce you will need:

1 cup of ripe mango (about 1 mango, or more if you want it super sweet)
1/2 of a medium red bell pepper
1-2 juicy, sweet tomatoes
1/3 a cup of sun dried tomatoes
about 4 basil leaves or more

Blend all the ingredients in your blender except for the basil, so your sauce doesn´t turn green. When everything is smooth add in the basil and blend on high for just a few seconds or about 10 seconds. Pour over your spaghetti and garnish with cherry tomatoes, fresh basil and ground hemp seeds.

    1. We use a spiralizer, that is a super cool tool that spiralizes veggies 🙂 But if you don’t have a spiralizer you can definitely use a regular vegetable peeler to make thin strips out of the zucchini. I do it sometimes to create something like fettuccini or tagliatelle 🙂
