We love to meet up in the evenings and make delicious dinner for ourselves and enjoy it together. We enjoy spending some time eating delicious raw healthy foods, talking about the blog and seeing how it is growing (thank you!), organizing new recipes that we want to make. Tonight we made this delicious raw Mexican tomato soup with sweet corn and coriander. It is so flavourful and packed with healthy veggies and herbs, and you can make it as spicy as you wish.
Not to mention how beautiful it looks! We couldn’t stop taking pictures of it! Isn’t your mouth watering? Ours’ are, and we just ate it! Coriander is our all time favourite herb, and when it is paired with delicious red, ripe Icelandic tomatoes, fresh corn, avocado, lime and spring onion.. oh my! Party in my mouth!
First we made a simple base of tomatoes and spices, then we topped it with a delicious blend of chopped Mexican inspired veggies, herbs and spices. Squeezed a lime over and sprinkled with spring onion.
For the tomato base you will need:
2 stalks of celery
3 cm piece of ginger
8 medium, ripe tomatoes
Put the celery, lime and ginger through your juicer and mix it in your blender with the tomatoes. Easy as that! If you want it spicier, feel free to add some other spices, such as chili, to the base.
For the toppings you will need:
1 large ear of fresh corn
3 medium tomatoes
1 red bell pepper
3 spring onions
Handful of coriander (or more!)
1/2 a lime
1 tsp each of ground cumin and coriander seeds
Remove the corn from the cob using a knife. Chop the tomatoes, bell pepper, spring onions and coriander and mix everything together in a bowl.
For the assembly, simply pour half of the base into your soup bowl, and scoop some of the topping mixture over. Squeeze some lime over it, add some spring onion, coriander and avocado for garnish. Devour!
