Tomato Chimichurri Salsa


Chimichurri is a green sauce based on finely chopped parsley originally from Argentina. Normally it’s used as a condiment with steaks. But I think it adds great flavour and goes well with a lot of things. Like fresh salsa! And it adds beautiful colour and herby flavour. And I’m sure it would also be great with other herbs too! Like cilantro or basil! IMG_1977

This is a quick raw recipe and the only thing you need is a food processor and a knife! Actually, most raw recipes are very quick to make. I notice now that I am eating raw that I spend a lot less time preparing my meals. Most of my meals take five minutes to make and I never have to wait until anything is done cooking! I am just eating the food as nature gave it to us. I think it’s beautiful.



Fresh Tomato Chimichurri Salsa

1 cup Parsley
2 Green onions
Small tomato
Juice from half a lemon
Juice from one small orange
5-6 sun-dried tomatoes (not in oil), soaked and chopped
Sprig of oregano
Three sprigs of thyme

Put all the ingredients in your food processor and pulse until it looks like pesto. Set aside while you prepare the other ingredients:

1/2 avocado, diced
1/4 small turnip, diced
1 red bell pepper, diced
1 mango, diced

Toss with the chimichurri in a bowl and serve with crispy lettuce leaves, or cucumber, zucchini and turnip slices.
