Chickpea and Zucchini Hummus

Hummus is one of the more popular Middle Eastern dips. Served with fresh or toasted pita bread, hummus makes for a great snack or appetizer. Tahini is an important part of the hummus recipe and is hard to substitute. This Chickpea hummus is amazing! It’s great to take hummus to parties and family gatherings and easy to take as lunch and fast to make. I know some people who make hummus weekly for their family, I think it is a great idea because it always comes in handy to have some hummus around.

For this recipe you will need:

1 cup of cooked chickpeas

1/2 zucchini, cut into bite sized pieces

1/2-1 lime, the juice

1/2 bunch of coriander or/and basil

1-2 tbsp of tahini

1 tsp of cumin powder

1/2-1 garlic glove (optional)

1-2 medjool dates (optional)

Simply put all your ingredients into your food processor or blender. Blend for 3-5 minutes on low until thoroughly mixed and smooth. Cut fresh vegetables such as bell pepper, cucumber, zucchini, carrots, celery, broccoli, cauliflower and tomatoes. Serve and enjoy with your family and friends.

I recommend storing your hummus in a jar and it will keep up to 3-5 days in the fridge
