Hola amigos! We are eating mexican food tonight! We made homemade corn tortillas and filled it with amazing goodness. Tomato salsa, black beans, fresh vegetables, sweet corn and coriander. OOOh my! That was goood!
The tortillas we made were super simple, they are only made of masa harina, or corn flour, and water. So don’t be afraid of making your own tortillas instead of buying some junk at the store. The homemade ones are so much better and healthier, and you will be proud of yourself for making them!
We added 1/2-1 cup of warm water to 1 cup of masa harina, knead it into a dough and rolled out some tortillas. This made around four small tortillas for us, but you can of course adjust the amounts according to your preferences. In a large nonstick skillet cook tortillas over medium heat for 1 minute on each side or until lightly browned.
For the black beans you will need:
1 can of black beans
1/2 zucchini
1/2 red bell pepper
Handful of mushrooms
1 cup tomato passata
1/2 cup water
1 tsp ground cumin
1 tsp ground coriander
Simply put everything into a small pot and cook for about 20 minutes or until much of the water has evaporated and the mixture seems thick.
The vegetables we used were chopped tomatoes, coriander, spring onion, sweet corn and red bell pepper, but feel free to add any ingredients you want.
We also used romaine lettuce for a wrap, and it was also super delicious!
