Tonight we went to Japan in our kitchen together and made vegan sushi. Unlike many people think, sushi does not mean fish, it simply implies to the way the rice is cooked. So we went and filled ours with delicious vegetables and mango.
Sushi is really simple to make and you don’t need a lot of ingredients to make good sushi. Simple is best!We also made a delicious orange-coriander dipping sauce with the sushi.
For the sushi you will need:
Approximately 1 cup uncooked short grain brown rice
2 cups water
2 cups chopped mango
2 spring onions
Handful of spinach
4 nori sheets or more if you prefer
Cook the rice in boiling water for 40-45 minutes until the rice is sticky. Put it on a plate and let it cool down to room temperature. Meanwhile, chop and slice all your veggies and make the nori ready to roll!
For the orange-coriander dipping sauce you will need:
1 tsp fresh or dried coriander
1 tsp coconut sugar
2-3 cm minced fresh ginger root
Juice the citrus and blend the other ingredients to it.
