We and our friend Eva held a vegan pizza night and made the most delicious gluten free vegan pizza and we want to share it with you! We made our pizza dough and sauce from scratch and it came out wonderfully!
Pizza doesn’t have to be loaded with unhealthy ingredients, white wheat, artificial ingredients and contain abnormal amount of calories per slice. You can load it with whatever you want! We put a large pile of veggies, greens and herbs on top of ours and a healthy tomato pizza sauce and then we ate it with fresh greens and salad.
For this delicious pizza sauce you will need: (and you can also use it as a pasta sauce!!)
1 bottle tomato passata
3-4 small carrots
1-2 stalks of celery
1 red bell pepper
Large handful of herbs de province (or your favorite herbs)
Put all the ingredients in a small saucepan and boil until all the vegetables are tender. Blend the sauce with a magic bullet or in a blender until it is almost smooth. Set aside while you prepare your pizza dough.
For the pizza dough you will need:
1 1/3 cups gluten free whole grain flour blend
2/3 cups brown rice flour
1/3 cups quinoa flakes
1 tsp baking powder
3/4-1 cups water
Turn your oven on 200°C. Whisk all the dry ingredients together and carefully add water until you can knead the dough.
Roll your dough into your desired pizza shape until it is ca 0.5 cm thick. Put it in the oven for 5-10 minutes.
Spread your pizza sauce on top and..
Now it’s time to load!
On our pizzas we put:
Red and green bell peppers
Fresh sweet corn
Fresh basil and parsley
