Chocolate Raspberry Almond Bars
For the base:
3/4 cup almonds
1 1/4 cup gluten-free oats
8 super soft dates
1-2 tbsp coconut oil
For the raspberry “jam”:
1 1/2 – 2 cups raspberries (you can also use strawberries or a blend of both and frozen is okay)
8-12 soft dates
juice from 1/2 lime
For the chocolate:
1 dl cacao butter and coconut oil (more coconut oil will result in softer chocolate, more cacao butter will make it more crunchy)
3/4 dl maple syrup
1 heaping dl cacao
First, if you are using frozen berries, I recommend taking them out of your freezer so your blender won’t be having a hard time..
And then, put your oven on the lowest temperature (40-45°C), or use a dehydrator, and put the oil for the chocolate in the oven.
Then you can start making the base for the bars, that is super simple. You just grind the almonds and oats in a food processor until it looks like a flour with some chunks in it. Then add the wet ingredients for the base and process until the consistency is like a dough and you can press it between your fingers without it falling apart.
Now press your base in a square pan and let it wait in the freezer.
Make the raspberry layer by blending all your ingredients in a blender until it is completely smooth. If you want it to be sweeter just add more dates and blend again. Add the raspberry jam on top of the base and smooth it out. Put it back in the freezer and let it set for an hour or so.
If your oil has melted in the oven, take it out, add the other ingredients and blend it together to make a super yummy homemade chocolate.
Pour the chocolate over the raspberry layer and they are ready! Decorate as you wish and let them set in the freezer so you can cut them in a desired shape and eat them! Yum!
Also.. For the leftover chocolate in the bowl.. grab a banana, dip it in the chocolate and you have yourself a chocolate banana! Who says eating healthy isn’t fun or delicious? At least I do love this!
Okay, I hope you like these as much as my mother does. She loves them. 🙂
