(Autumn) Spring Rolls

Hi! I wanted to share with you this delicious and easy recipe that is just perfect if you want something easy, healthy and light for lunch or dinner. They are made with rice paper and nori, but you can always omit either one, or use both.Image

This is really a very versatile dish and you can just play with the ingredients as you like. You can add anything your heart desires and that makes these rolls so amazing, and you just never get tired of them! Today I just used vegetables, lettuce and some raw tahini dressing, but it is also delicious to use some grains, sweet potatoes or even fruit! Like mango or kiwis! And of course it isn’t worse that they are so wonderfully beautiful! YUM


Spring rolls with tahini dressing:

Ingredients for rolls:
Nori sheets
Rice paper sheets
1/2 large avocado
2-3 tomatoes
Large handful of any lettuce you like, I used spinach
2 red or yellow bell peppers
1 spring onion

Ingredients for tahini dressing:
2 tbs tahini
2 tbs lemon juice
Water (added as needed)

Sesame seeds (for beautiful sprinkle 🙂 )

Start with making the sauce, by adding all ingredients to a bowl, whisk together, adding more and more water until a desired consistency is reached. In the and you get a perfect sauce that tastes like sesame heaven and looks like mayonnaise! 🙂

Then you cut up all your filling ingredients so they are ready to roll!


Then you start preparing your rice paper, which is going to be the outer layer of the wrap. You have to get it wet by soaking it in water for just a few seconds, be careful because if you soak it for too long it will get mushy and hard to work with, but you will also have to be sure that no spots are dry, otherwise your rice paper will crack and everything will fall apart. 😉

Lay you rice paper on a flat surface and your nori sheet on top, then start adding all your filling on top and the tahini dressing also.

Start rolling up, tuck the sides in and keep rolling. Everything will stick together nicely so it is easier than it seems.

And you have your spring roll ready! Enjoy it! It is also delicious to dip it in some tamari or something spicy 😀
