Indian Lentil Dhal (No Oil and Vegan)

This recipe is grate during the winter season when you want to eat something warm and spicy! I love Indian food and this is my favorite type of lentil Dhal. For the recipe you will need:

1 cup lentils (red or brown)
2-3 cups water
3-4 cups vegetables, diced. Here are some samples, I recommend using 2-4 different types of vegetables:
    Sweet potatoes
    Butternut Squash
    Green peas
    Broccoli
    Cauliflower
    Carrots
    Bell pepper
    Spinach
    Mushrooms
2 cm fresh minced ginger
1 1/2 tsp Garam Marsala
1 cinnamon stick
1/2 tsp or more of Cayenne pepper
2-4 cloves of minced garlic or 1 chopped onion
1 tsp cumin powder (optional)
1-2 laurel leafs (optional)
Pinch of chili powder or chili flakes (optional)

Simlpy put all your ingredients in a pot. Bring to the boil, reduce the heat to medium and simmer, stirring to prevent sticking for 25-35 minutes. Serve and enjoy! Bon appetit!
