Triple layer raw chocolate mousse pie. Does that sound good or what? This pie has chocolate crust, banana middle layer and a chocolate mousse top layer. And it is delicious.
I served it at a grill party and it was finished in seconds. Nothing was left.
This is what you will need for this delicious raw pie:
3 dl walnuts
3 dl coconut
1 tsp cacao
1 tsp carob
13-14 very soft dates (I just add until the consistency is right, it depends on the size of your dates, if yours are big like medjool, you probably need a lot less)
Chocolate mousse layer:
2 heaping dl date paste (see directions below)
8 tbsp cacao
3/4 dl coconut oil
100 g cashews (soaked for 2 hours or more)
2 ripe bananas
To make the crust: Put walnuts, coconut, cacao and carob in your food processor and make a course flour. Then you slowly add your dates until it looks like a crust and it sticks together.
Press it into a pie pan (I covered mine with baking paper and drizzled some coconut on it so it wouldn’t stick too much to the pan) and put in the freezer while you prepare the chocolate layer.
To make date paste: Add 2 dl of dates in a bowl, cover with warm water and mash until it looks disgusting.
Chocolate layer: Put everything in your food processor and blend until reeaally smooth and creamy. You might need to add more water if it is too thick.
Take your crust out of the freezer, cut your bananas in thin slices and layer them in your crust. Pour the creamy chocolate layer on top and put in the refrigerator until it has cooled down and decorate as you wish!
Making the crust, all dry ingredients are ground and dates are added one by one, until it looks like this:
Then you press it into your pie pan and freeze while you make the date paste and chocolate.

Now you put it with everything else for the chocolate layer in you food processor until smooth.
Then you prepare your banana layer:
And pour your chocolate over, refrigerate, and decorate as you wish. I used violets.
Slice and eat and enjoy!
