Persimmon and banana pudding

Persimmon are one of my favorite fruits. I love how sweet they taste and filling they can be. They don´t look very appetizing when fully ripe, they feel mushy and look like a very funky ugly fruit, in my opinion. Every time someone is visiting and sees the fruit the first time they say something like this: “eww…that must be very old!” but actually they taste amazing! I want to share my favorite recipe with you when using persimmons, you will need:

2 very ripe persimmons
2 frozen bananas
To garnish (optional): 2-4 chopped dates, 2 tbsp raisins, some raspberries, blueberries, any chopped nuts that you like, coconut flakes or shredded coconut.

Cut the frozen bananas into pieces and the ripe persimmon. Place in the blender with some water if you don´t have a high speed blender (I use a vitamix so I don´t not need any water). Blend until smooth.

Pour into bowl and garnish with what you like if you desire.
