80/10/10 is a fruit based diet with 80% of it´s calories coming from carbs, 10% of it´s calories coming from fat and the other 10% coming from protein. For this recipe you will need:
4 Cups of frozen mango (best if the mango is very ripe)
1/3 cup of medjool dates
1/3 cup of “harder than medjool” dates
Blueberries, kiwi or other fruit or berries to garnish if desired
1. Place your “harder” dates into a food processor fitted with the S-blade and process until chopped. Add your medjool dates and process until you get a good doughy cake base.
2. Spread the date dough evenly onto a pie plate if in separate cupcake form (I always use a rubber spatula because it is so easy to remove the cake from it)
