80/10/10 Date and Mango Bithday Cake!

80/10/10 is a fruit based diet with 80% of it´s calories coming from carbs, 10% of it´s calories coming from fat and the other 10% coming from protein. This diet might sound a bit crazy to you, am I right? But don´t judge it until you have tried it out for yourself, because I love eating this way! Many people choose eat 100% this way for the rest of there lives because they love all the benefits that they get. This diet can also be used as a temporary cleanse for the body. For this recipe you will need:

4 Cups of frozen mango (best if the mango is very ripe)

1/3 cup of medjool dates

1/3 cup of “harder than medjool” dates

Blueberries, kiwi or other fruit or berries to garnish if desired


1. Place your “harder” dates into a food processor fitted with the S-blade and process until chopped. Add your medjool dates and process until you get a good doughy cake base.

2. Spread the date dough evenly onto a pie plate if in separate cupcake form (I always use a rubber spatula because it is so easy to remove the cake from it)

Image  3. Place your frozen mango into the food processor and process until smooth. Be patient this may take about 3-5 minutes, remember to scrape down the sides every minute or so.

Image4. Fill pie plate or cupcakes with the mango “ice cream” and freeze for about 1 hour or more before serving.


ImageNOTE: You can also substitute the mango with banana, it´s very yummy!
